  • 2 lbs ground beef
  • 1 cup breadcrumbs Can substitute with oats for a healthier option.
  • 2 eggs
  • 1/2 cup barbecue sauce Plus additional for glazing.
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste
  • 8 slices turkey bacon, cooked and crumbled Can substitute with smoked turkey bacon or plant-based bacon.
  • 1 cup shredded cheddar cheese Freshly shredded recommended.

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a large bowl, mix together ground beef, breadcrumbs, eggs, 1/2 cup barbecue sauce, garlic powder, onion powder, salt, and pepper until well combined.
  • Take a small amount of the meat mixture and flatten it in your hand, add turkey bacon and cheddar cheese, then wrap the meat around the filling.
  • Repeat with the remaining mixture to form balls.

Cooking

  • Place the formed meatloaf bombs on a baking sheet lined with parchment paper.
  • Bake for 25-30 minutes or until fully cooked (internal temp 160°F for beef).
  • Brush with the remaining 1/2 cup barbecue sauce and bake for an additional 5 minutes.
  • Serve hot and enjoy!

Notes

Make ahead by shaping the bombs and refrigerating for up to 24 hours, or freeze raw for up to 3 months. For leftovers, reheat in an oven at 350°F.
