  • 1 package Pizza dough Use store-bought or homemade.
  • 2 cups Cooked chicken breast Shredded, chopped, or pulled; rotisserie chicken is a time-saver.
  • 1/2 cup BBQ sauce Choose your favorite flavor.
  • 2 cups Mozzarella cheese For extra richness, mix in smoked gouda.
  • 1 medium Red onion Sliced; can substitute with green onions.
  • 1/4 cup Fresh cilantro Add after baking for brighter flavor.
  • 2 tablespoons Olive oil For brushing the pizza crust.

Instructions
 

Preparation

  • Preheat the oven to 475°F (245°C) and roll out the pizza dough on a floured surface to your desired thickness.
  • Transfer the dough to a greased pizza pan or baking sheet and brush the edges with olive oil.

Chicken Preparation

  • Shred or chop the cooked chicken breast into bite-sized pieces and toss with 2 tablespoons of BBQ sauce until well coated.
  • If the chicken seems dry, add a splash of olive oil or a bit more sauce.

Assembly

  • Spread the remaining BBQ sauce evenly over the pizza dough, leaving a 1-inch border for the crust.
  • Sprinkle half of the mozzarella cheese over the sauce.
  • Distribute the BBQ chicken pieces and sliced red onions evenly over the cheese.
  • Top with the remaining mozzarella cheese.

Baking

  • Bake for 12-15 minutes until the crust is golden brown and the cheese is bubbly.
  • Remove from oven and immediately sprinkle fresh cilantro over the hot pizza before serving.

Notes

Use leftover chicken for convenience. This pizza is make-ahead friendly and can be stored in the fridge or freezer. Reheat slices in an oven or skillet.
