Taco Ingredients

  • 1 pound ground beef (80/20) For best crispy edges.
  • 8 small flour tortillas Use gluten-free tortillas if needed.
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • 8 slices American cheese Cheddar or Colby can be used as substitutes.
  • ¾ cup shredded iceberg lettuce
  • ½ cup dill pickle chips
  • ¼ cup finely chopped white onion Adjust for kids' preferences.
  • 1 tablespoon neutral oil For skillet frying.

Special Sauce Ingredients

  • ¾ cup mayonnaise Can use light mayo.
  • 3 tablespoons ketchup Reduced-sugar ketchup is an option.
  • 2 tablespoons yellow mustard
  • 2 tablespoons sweet pickle relish
  • 1 teaspoon white vinegar
  • ½ teaspoon paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder

Instructions
 

Making the Sauce

  • In a small bowl, whisk together the mayonnaise, ketchup, mustard, pickle relish, vinegar, paprika, garlic powder, and onion powder. Taste and adjust to preference.

Preparing the Tacos

  • Divide the ground beef into 8 equal portions and press it onto one side of each tortilla.
  • Sprinkle the pressed beef with salt and pepper.

Cooking the Beef

  • Heat oil in a skillet over medium-high heat. Once hot, place tortillas beef-side down into the skillet.
  • Cook for about 3-4 minutes until beef is deeply browned and crispy.

Adding Cheese

  • Flip the tacos so tortilla side is down and add a slice of cheese on each beef side.
  • Cook for another 1-2 minutes until cheese is melted and tortilla is golden.

Assembling the Tacos

  • Remove tacos from skillet and top each with shredded lettuce, pickle chips, and chopped onion.
  • Drizzle special sauce over toppings and serve immediately.

Notes

Prep the sauce and toppings in advance for quicker assembly. Store any leftovers in an airtight container in the fridge for 2-3 days.
