  • 1 medium zucchini Brings vitamins and fiber.

Sauce and seasonings

  • 1 teaspoon cornstarch For marinating chicken.
  • 1/4 cup light soy sauce For marinade and flavor.
  • 1 teaspoon sesame oil Adds nuttiness.
  • 2 teaspoons sugar (or honey) Enhances sweetness.
  • 1 tablespoon rice apple vinegar (optional) Add for extra tang.
  • 1 tablespoon cooking oil For sautéing.
  • 1 tablespoon oyster sauce Umami flavor booster.
  • Ground black pepper (optional) To taste.

Instructions
 

Marinate Chicken

  • Cut chicken into bite-sized pieces and marinate with cornstarch, soy sauce, sesame oil, sugar (or honey), and rice apple vinegar for at least 30 minutes.

Sauté Garlic and Chicken

  • Heat oil in a wok over medium-high heat. Sauté smashed garlic until fragrant, then add marinated chicken and cook for about 2 minutes.

Stir-Fry Zucchini

  • Remove chicken from pan; add sliced zucchini and stir-fry for 5 minutes until tender.

Combine and Serve

  • Combine chicken with zucchini, add oyster sauce and black pepper if desired, stir-frying for another 2-3 minutes until fully cooked.
  • Serve hot over rice or noodles.

Notes

Keep everything prepped before you start for easier cooking. Marinate chicken overnight for a make-ahead option, and store leftovers in an airtight container for up to 3-4 days.
