  • 1 small head green cabbage, shredded Mellow and crunchy
  • 1 small head purple cabbage, shredded Earthier flavor, holds texture
  • 1 cup shredded carrots Adds sweetness and crunch
  • 1 cup Fritos corn chips Adds crunch
  • 1 cup diced bell peppers Colorful addition
  • 1/2 cup sliced green onions Fresh flavor

Dressing

  • 1/2 cup mayonnaise Can substitute with vegan mayo
  • 2 tablespoons apple cider vinegar Provides tanginess
  • 1 tablespoon chipotle sauce For a smoky kick
  • to taste Salt and pepper Adjust according to preference

Instructions
 

Preparation

  • In a large bowl, combine the green cabbage, purple cabbage, carrots, bell peppers, and green onions.
  • In a separate small bowl, mix together the mayonnaise, apple cider vinegar, chipotle sauce, salt, and pepper.
  • Pour the dressing over the cabbage mixture and toss until well coated.
  • Just before serving, add the Fritos and toss gently to combine.
  • Serve immediately and enjoy!

Notes

You can make the salad part a day ahead; just keep Fritos off until serving. Leftovers can last for up to 3 days. This salad goes well with grilled meats or can be used as a topping for tacos.
