French Dip Tortilla Roll Ups

Ingredients
  

Filling Ingredients

  • 1 lb thinly sliced roast beef (deli style or leftover) Roast beef works well, can use leftovers.
  • 1.5 cups shredded mozzarella or provolone cheese Both types melt beautifully.
  • 4 large flour tortillas Whole wheat or gluten-free tortillas can be used.

Au Jus Ingredients

  • 2 cups beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp soy sauce
  • 1 tsp onion powder (for au jus)
  • 1 tsp garlic powder (for au jus)

Seasoning

  • 2 tbsp butter, melted
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried parsley

Instructions
 

Preparation

  • Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  • Lay tortillas flat and layer sliced roast beef and shredded cheese down the center of each.
  • Roll tortillas tightly and place seam-side down on the baking sheet.
  • Brush with melted butter and sprinkle with garlic powder, onion powder, and parsley.

Cooking

  • Bake for 12–15 minutes, or until tortillas are golden and cheese is melted.
  • While baking, prepare au jus by combining beef broth, Worcestershire sauce, soy sauce, onion powder, garlic powder, salt, and pepper in a saucepan and simmer for 5–7 minutes.
  • Remove roll ups from oven, slice, and serve warm with au jus for dipping.

Notes

Make-ahead: Assemble and refrigerate up to 24 hours. For longer storage, freeze assembled roll ups and reheat from frozen. Serve with carrot sticks, a green salad, or roasted potatoes.
