Ingredients
  

Dry Ingredients

  • 1 cup All-purpose flour Gluten-free flour can be used!
  • 1/4 cup Granulated sugar Coconut sugar can be your less refined option.
  • 1 tablespoon Baking powder Avoid substituting directly with baking soda.
  • 1/4 teaspoon Salt
  • 1 teaspoon Ground cinnamon

Wet Ingredients

  • 1 large Egg A flax egg works wonders for a vegan option!
  • 1/2 cup Milk Dairy-free milk can be used.

Pineapple

  • 1 whole Fresh pineapple Sliced into rings.

Frying

  • 2 cups Vegetable oil Canola or coconut oil work beautifully.
  • 1 tablespoon Additional cinnamon and sugar Adjust this mixture to your liking.

Preparation

  • In a big bowl, whisk together flour, sugar, baking powder, salt, and cinnamon.
  • In a separate bowl, whisk the egg and milk together until combined.
  • Pour the wet mixture into the dry ingredients and stir gently, leaving some lumps.
  • Slice the fresh pineapple into rings and heat the oil in a deep skillet.

Frying

  • Dip each pineapple ring into the batter, letting the excess drip off.
  • Carefully place it in the hot oil, frying for about 2-3 minutes on each side until golden brown.
  • Drain on paper towels and sprinkle with cinnamon-sugar mixture.

Notes

You can prep the batter ahead of time and store it in the fridge for a day. These fritters keep well in an airtight container for a couple of days.
