  • 1 package vanilla pudding mix Acts as a thickener.
  • 1 cup mini marshmallows Adds sweetness.
  • 1 cup shredded coconut Brings tropical flavor and texture.
  • 1 cup chopped pecans Can be substituted with walnuts or omitted completely.
  • 8 oz whipped topping Can use light or sugar-free for lower calories.

Preparation

  • In a large mixing bowl, combine the drained crushed pineapple and the vanilla pudding mix. Stir until fully combined.
  • Fold in the mini marshmallows, shredded coconut, and chopped pecans using a spatula.
  • Gently fold in the whipped topping until the mixture is fluffy and well combined.
  • Cover the bowl and chill in the refrigerator for at least 1 hour, preferably 2 hours.

Notes

Pineapple Fluff can be made a day in advance and stored in an airtight container for up to 3 days. For a fun twist, consider adding colorful sprinkles or maraschino cherries before serving.
