Ingredients
  

For the pot pie

  • 1 each refrigerated pie crust Store-bought for convenience.
  • 1 cup pizza sauce
  • 2 cups shredded mozzarella cheese Use low-fat for a healthier option.
  • 1 cup cooked and sliced turkey pepperoni Can substitute with plant-based sausage for a vegetarian option.
  • 1 cup cooked and diced bell peppers
  • 1 cup cooked and diced mushrooms
  • 1 cup cooked and crumbled turkey Italian sausage Alternatively, use plant-based sausage.
  • 1 teaspoon Italian seasoning
  • to taste Salt and pepper

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • Roll out the pie crust and place it in a pie dish. Press it gently into the edges and patch any tears.
  • In a large bowl, mix together the pizza sauce, mozzarella cheese, turkey pepperoni, bell peppers, mushrooms, turkey Italian sausage, Italian seasoning, salt, and pepper.
  • Pour the mixture into the pie crust, leaving room for a top crust.
  • Cover with another layer of pie crust, sealing the edges by crimping with a fork or fingers.
  • Cut slits in the top crust to allow steam to escape.

Baking

  • Bake in the preheated oven for 25-30 minutes or until the crust is golden brown.
  • Let cool for a few minutes before slicing and serving.

Notes

Make-ahead option: Assemble and refrigerate the pie up to 24 hours in advance, or freeze before baking for up to a month. Reheat in the oven for best results. Kid-friendly; cut into small squares for serving.
