  • 4 slices slices sturdy country bread or sourdough Use sturdy bread for optimal crunch.
  • 4 oz Boursin cheese (herbed) Creamy and herby, the star of the dish.
  • 6-8 oz smoked or hot-smoked salmon, flaked Can substitute with leftover cooked salmon.
  • 1 small handful baby arugula or baby spinach Optional, adds freshness.
  • 1 tbsp Dijon mustard Optional, adds tangy flavor.
  • 1 tbsp butter, for grilling Can substitute with olive oil.
  • to taste Fresh lemon zest and black pepper For finishing touch.

Instructions
 

Preparation

  • Spread Boursin cheese on two slices of bread.
  • If using, dab Dijon mustard on the other two slices.
  • Layer the flaked salmon and arugula or spinach on top of the Boursin cheese.

Grilling

  • Heat a skillet over medium heat and melt the butter.
  • Grill each sandwich for 2-3 minutes on each side until golden and the cheese is melty.
  • If the bread browns too quickly, lower the heat.
  • Press gently with a spatula and cover briefly if the center isn't fully melty.

Notes

Make-ahead: Flake cooked salmon and store in an airtight container for up to 3 days. Leftover sandwiches can be refrigerated for 1 day; reheat in a skillet to maintain crispness. Freeze ungrilled sandwiches and toast from frozen, adding a minute or two.
