Ingredients
  

Potatoes

  • 2 pounds Yukon Gold or baby potatoes Choose for the best texture and flavor. Can also use red potatoes.

Fats

  • 1/2 cup butter Can substitute with olive oil.

Flavorings

  • 1 packet Lipton Onion Soup Mix Key ingredient for flavor.
  • 2 cups beef or chicken broth Use vegetable broth for vegetarian.
  • 1 teaspoon salt Adjust to taste.
  • 1/2 teaspoon pepper Adjust to taste.

Preparation

  • Wash and scrub the potatoes. Slice them into roughly 1/2-inch thick rounds or small chunks.
  • Layer the potatoes into the slow cooker.
  • In a small bowl, melt the butter (or measure your olive oil) and stir in the Lipton Onion Soup Mix, the broth, salt, and pepper.
  • Pour the mixture all over the potatoes.

Cooking

  • Cover the slow cooker and cook on LOW for about 5–6 hours or on HIGH for about 3–3½ hours.
  • Around the halfway mark, give everything a gentle stir if possible.
  • Check the potatoes for tenderness close to the end of the cooking time.
  • If potatoes seem dry, splash in an extra 1/4 cup of broth and let it cook for another 15 minutes.

Notes

These potatoes can be made ahead and stored in the fridge for up to 4 days. They can be reheated in the slow cooker, microwave, or oven. Cut potatoes into smaller chunks for kids or make into potato cakes if desired.
