  • 1 pound ground beef (or ground turkey)
  • 4 medium potatoes, diced Surprise hero of the dish
  • 1 medium onion, finely chopped
  • 1 green bell pepper, diced green bell pepper, diced You can substitute if desired
  • 2 cloves garlic, minced

Sauce Ingredients

  • 1 cup ketchup
  • 2 tablespoons Worcestershire sauce Make sure it's gluten-free if needed
  • 1 tablespoon brown sugar
  • 1 teaspoon chili powder Adjust for kids if needed
  • ½ teaspoon paprika Smoked paprika can be used for deeper flavor
  • Salt and pepper to taste Salt and pepper, to taste

Cooking Ingredients

  • 2 tablespoons olive oil Divided for cooking
  • Shredded cheese optional Shredded cheese (optional, for topping) Add during the last minutes of cooking
  • Fresh parsley, chopped for garnish Fresh parsley, chopped (for garnish) Adds freshness

Instructions
 

Preparation

  • Start by washing and dicing the potatoes into bite-sized pieces. Set aside.
  • In a large skillet, heat 1 tablespoon of olive oil over medium-high heat.
  • Add the ground beef and cook until browned, about 5-7 minutes. Drain excess fat if necessary.

Cooking

  • Add the remaining olive oil to the skillet.
  • Toss in the chopped onion, green bell pepper, and minced garlic. Sauté for about 3-4 minutes until the vegetables are softened.
  • Stir in the ketchup, Worcestershire sauce, brown sugar, chili powder, paprika, salt, and pepper.
  • Allow the mixture to simmer for 5-7 minutes, stirring occasionally.
  • Add the diced potatoes, stirring to combine everything well.
  • Pour in about ½ cup of water, cover the skillet, and reduce the heat to low.
  • Let it cook for 15-20 minutes or until the potatoes are tender.
  • Remove the lid and check that the potatoes are fork-tender; Add a bit more water if it looks dry.
  • If you like, sprinkle shredded cheese on top of the dish during the last couple of minutes of cooking. Cover the skillet to melt the cheese.
  • Once everything is cooked and combined, garnish with chopped parsley before serving.

Notes

Make-ahead: Cook it, cool it, refrigerate up to 3 days, or freeze portions for up to 3 months. Reheat gently. For crispier potatoes, par-cook them in the microwave or roast them first.
