  • 1 bag Tater tots Use any brand you like, preferably from bulk.
  • 4 large Eggs Can substitute with a mix of whole eggs and egg whites.
  • 1 cup Cheese (shredded) Cheddar, pepper jack, or any cheese that melts well.
  • 1 lb Beef sausage Use pork-free options like turkey or plant-based sausage if preferred.
  • 1 cup Milk Whole, 2%, or unsweetened oat milk for a dairy-free option.
  • 1/4 cup Flour For making the gravy.
  • 1 tsp Salt To taste.
  • 1 tsp Pepper To taste.

Preparation

  • Cook tater tots according to package instructions until crispy.
  • Spread tater tots in a single layer on a baking sheet and bake for 20-25 minutes.
  • In a skillet, cook the beef sausage over medium heat until browned, about 6-8 minutes.
  • Remove sausage from the skillet and set aside.
  • In the same skillet, add flour to the rendered fat and whisk it together.
  • Gradually whisk in milk until it thickens into a gravy, seasoning with salt and pepper.
  • While gravy cooks, scramble eggs in a separate pan over medium-low heat until soft and fluffy.
  • In a bowl, layer crispy tater tots, scrambled eggs, and cooked sausage.
  • Top with shredded cheese and pour hot sausage gravy over the entire bowl.

Notes

For meal prep, cook components ahead and store in the fridge. Reheat gently. Leftovers are good for 3 days in the fridge. To reheat, microwave and pop under the broiler or in the air fryer to re-crisp the top. Customize your bowl with extras like green onions or spices.
